Cayenne-Rubbed Chicken with Avocado Salsa

Thank you Martha.. yet again for the recipe. This is also one of my "go - to" recipes if I am in a hurry. Its SO easy and SO quick. I cannot tell you how simple it is.

We found this at some point in one of her everyday food magazines. I knew right when I saw the picture that Freeland would love it. And I know my husband well, because he does love it. I would say its even one of his favorites. That may be because he realizes its so easy to make and so he is just trying to do me a favor - but either way.. he eats this one up quick!

Me on the other hand.. well Im not a huge red onion fan. (unless were talking about red onions on BBQ Chicken Pizza) So its not my most favorite. But I still make this and then just eat the chicken without the red onions on it. And the chicken is super yummy!

So, if you have an avocado that needs to be used or your looking for something quick & easy.. enjoy! It serves about 4.
I usually double (sometimes triple) the amount of the spice rub depending on how many pieces of chicken I am using. (not the salt though) I make mine with Jasmine Rice and serve it on the side. I sometimes add coconut milk to the rice if I have it (yum X2) and If Im feeling extra crazy I change up the spice rub that goes on the chicken. If you arent a "spicy" person just half the Cayenne and then use any other spice you prefer for the other half. We use a Cajun breakdown spice that is amazing.

Ingredients
Coarse salt and ground pepper
1/4 teaspoon cayenne pepper
4 boneless, skinless chicken breast halves (6 to 8 ounces each)
2 tablespoons olive oil
1 medium red onion, finely diced
2 tablespoons fresh lime juice
1 Hass avocado, pitted and cut into chunks

Directions

  1. In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon pepper, and cayenne; rub all over chicken.
  2. In a large skillet, heat oil over medium. Add chicken, and cook until browned on the outside and opaque throughout, 8 to 10 minutes per side.
  3. Meanwhile, in a medium bowl, combine onion and lime juice; set aside. Just before serving, fold avocado chunks into onion mixture; season with salt and pepper. Serve chicken topped with salsa.
Ta Da! Thats it! Youre done.
